Orange Star Cookies
Ingredients
• 1 orange
• Zest of 1 orange
• 2 sticks butter
• 1 cup sugar
• Pinch of salt
• 2 egg yolks
• 1 large egg
• 4 cups flour
• 1 teaspoon baking powder
• 1 1/2 cups orange marmalade
• 3 tablespoons orange extract
• Powdered sugar for topping
• Flour for work surface
• Butter or cooking spray
• Star shaped cookie cutter
Directions
1. Juice the orange, and strain to remove seeds. Set aside.
2. Mix softened butter with sugar. Add orange zest, 3 tablespoons of juice from orange, salt, large egg and egg yolks, stirring until frothy.
3. Mix flour with baking powder and sift into mixture. Knead with your hands into a smooth dough, and roll in plastic wrap. Chill dough in the refrigerator for 3 hours.
4. Preheat oven to 325°F. Grease two baking sheets. Spread out flour and flatten the dough on top with a rolling pin – about 1/10 of an inch thick.
5. Cut out stars, rolling scraps of dough back out to cut as many stars as possible. Pinch a circle into the center of cookies, being sure to not make holes. Place cookies on the baking sheets and bake for 10-12 minutes. Cookies will be firm to the touch when fully baked, and should not brown.
6. Mix orange marmalade with the extract in a saucepan on low heat until smooth. Place a spoonful of the mixture into the dipped center of each cookie. Sprinkle with powdered sugar.
Makes 40 pieces
